Chef Enrique Paniaqua, a Cambridge native who grew up in a melting pot of cultures and ethnic foods, has traveled extensively throught the world. After living in San Francisco and Sante Fe, as a chef and restaurant owner, he returned to his roots in the Boston area. His knowlege of ingredient combinations, brings an exciting and eclectic blend of flavors to his cooking, ranging from classic to New World cuisine.
He has worked locally at Copley Plaza Hotel, The Harvest in Cambridge and The Ironside Grill, just to name a few. After over 25 years in the food service industry, Chef Paniaqua has settled into the newly renovated and up and coming Exchange Street Bistro.
